Cranberries are a nutritional powerhouse, rich in antioxidants that protect cells and high in vitamin C, which supports immune function, and prebiotic fiber that “feeds” your healthy gut microorganisms. This recipe from CancerChoices’ Senior Clinical Consultant, integrative oncology nurse navigator, and health-supportive chef Laura Pole combines cranberries with the natural sweetness of apples, oranges, and Grade B maple syrup. It’s a delightful addition to your holiday meals, allowing you to enjoy festive flavors while avoiding the added sugars and preservatives found in store-bought options.
Cranberry, Orange, and Apple Relish
Ingredients:
- Zest of 1 orange
- 2 navel oranges, supremed, sections diced (squeezed the remaining pith to extract the juice)
- 1 crunchy, sweet apple, small diced
- 1 cup fresh or frozen cranberries
- Grade B Maple Syrup (1/4 cup) or Stevia (Truvia) to taste
- 1 or 2 pinches cloves
- 1 or 2 pinches salt
Directions:
- Mix all ingredients in a saucepan.
- Place on medium-high heat until the liquid begins to boil.
- Reduce the heat to a simmer.
- Simmer until the cranberries just begin to burst open and the apples are al dente.
- Remove from heat, chill, and serve.
