If you’re short on time, organic bagged broccoli slaw can be a quick and easy substitute without sacrificing nutrition. Whether you enjoy it as a side dish, in a salad, or even tossed into a stir-fry, this recipe is a simple way to incorporate more cruciferous veggies into your meals.

Mardi Gras Slaw with Pine Nuts and Golden Raisins

Makes: 6–8 servings

Note: If you prefer a more traditional slaw taste, you can use canola or safflower mayo in place of the lemon juice, olive oil, and salt.

Ingredients:

  • 4 large carrots, peeled and cut into 3-inch lengths
  • 4 broccoli stems
  • ½ head red cabbage
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons golden raisins, soaked in warm water then drained
  • 2 tablespoons toasted pine nuts (or toasted almond slivers)
  • 2 tablespoons expeller-pressed grapeseed, canola, sunflower, or extra-virgin olive oil
  • 2 tablespoons finely chopped parsley
  • Salt, to taste

Directions:

Grate the carrots, broccoli stems, and red cabbage and place them in a large mixing bowl. In the same bowl, add the oil, lemon juice, parsley, salt, raisins, and pine nuts. Toss to combine. Taste the slaw and sweeten with a little sucanat if needed.
