Fruit Parfait with Yogurt Cream
Servings: 6
Ingredients:
- Yogurt Cream:
- 1 cup organic plain full-fat Greek yogurt or goat yogurt with live active cultures
- 1 tbsp honey or dark amber maple syrup (or ¼ tsp monk fruit sweetener)
- 1 tsp vanilla extract
- Pinch of salt
- 2 tsp lemon zest
Fruit:
- 1 organic apple (such as Fuji, Gala, or Honeycrisp)
- 1 just ripe organic pear (such as Bartlett or D’Anjou)
- ½ tsp lemon juice mixed with 1 tbsp water
- 1 pint organic strawberries or other seasonal berries/fruit (e.g., pomegranate seeds in winter)
- 1 bunch of peppermint (about 4 sprigs)
- ¼ cup apple cider or juice mixed with 1 tbsp strawberry or cherry all-fruit jam
Directions:
Put the yogurt in a small mixing bowl. Stir in the vanilla, honey (or other sweetener), salt, and lemon zest using a whisk to combine. Taste and adjust for sweetness.
Meanwhile, wash and core the apples and pears, then dice them into bite-sized pieces. Toss them in the lemon juice/water mixture and drain.
Wash the berries. If using strawberries, remove the stems from all but six berries. Set the six unstemmed berries aside. Slice the remaining strawberries into thin slices.
Remove the leaves from one sprig of mint and chop them. Clip six pairs of leaves from the remaining three sprigs of mint and set them aside for garnish.
Gently toss the apples, pears, sliced strawberries (or other berries/seasonal fruit), chopped mint, and the apple cider or juice/jam mixture together in a bowl.
Assemble six parfait cups or six-ounce clear glasses. Spoon a layer of fruit into the bottom of each glass. Add a dollop of yogurt cream over the fruit layer. Repeat with a second layer of fruit, followed by another dollop of cream.
Top each parfait with a whole strawberry (or other berries) and a pair of mint leaves for garnish.
