This Tempeh Salad, shared by CancerChoices’ Senior Clinical Consultant, health-supportive chef, and culinary translator, Laura Pole, is packed with flavor and nourishing ingredients—perfect for lunch, a quick snack, or even meal prep!

Inspired by the beloved “Move Over Chicken Tempeh Salad” from Nancy Maurelli, this recipe gives the classic Waldorf salad a nutritious upgrade. With protein-rich tempeh, crunchy veggies, and fresh herbs, it’s loaded with fiber, protein, antioxidants, and healthy fats to fuel your body while keeping things delicious.

Tempeh Salad

Makes 4 cups–About 8 servings

Ingredients:

  • 3 8-oz. Packages Tempeh (preferably Garden Veggie style, with no gluten or grains mixed in), diced into ½-inch cubes
  • 1 Tbsp. Extra Virgin Olive Oil
  • ½ cup Red Bell Pepper, diced
  • ¼ cup Red Onion, finely diced
  • ½ cup Celery, diced
  • ½ cup Red Grapes, diced
  • ¼ cup Sweet Pickle Relish
  • 1 tsp. Each: Sea Salt, Turmeric, Mustard
  • 2 Tbsp. Fresh Dill or Parsley, chopped
  • ½ – ¾ cup Vegan Mayonnaise

Garnishes: Leaf Lettuce, Sliced Tomato

Optional: Serve with a tablespoon of fermented vegetables like naturally fermented sauerkraut for an added probiotic boost!

Directions:

Preheat the oven to 400°F. Toss the tempeh in olive oil, spread on a baking sheet, and bake for about 20 minutes, or until golden brown. Let it cool.

Combine all ingredients (except garnishes) in a mixing bowl and mix well until everything is coated with mayonnaise. Serve on a bed of lettuce and garnish with tomato, or stuff in a pita pocket for an easy meal on the go.
